1 pound ground beef or ground turkey
1 yellow onion, chopped and diced
1 1/4 cup of your favorite jar of salsa *see note below
1/2 cup – 3/4 cup black beans
1/2 cup – 3/4 cup frozen fire roasted corn
4 oz diced green chilies
1 cup cheese
Optional add ins: spinach, bell peppers, salt and pepper to taste
Optional toppings: avocado, sour cream
Pour a small amount of oil into a frying pan or cast iron pan and heat. Cook onions in oil until translucent and soft. Add meat and brown all the way through until fully cooked. (I use 1.5-2 pounds meat). Once cooked, add salsa** I use a small can of red enchilada sauce (the Siete brand small red enchilada jar is delish!). If you are using salsa or 1.5-2 cups crushed tomatoes add taco seasoning to your meat for flavor and taste before you add the salsa or tomatoes. If using enchilada sauce you can still add taco seasoning for some flavor but the enchilada sauce has lots of flavor on its own. Add drained black beans, fire roasted corn and diced green chilies. Eye ball these measurements based on your taste – add as much as you want! Simmer together for a few minutes. Add shredded cheese to the top, turn off the stove or turn to low and cover with lid or sheet pan to allow cheese to melt.
Serve warm. Serve as a dip with tortilla chips, serve in corn or flour tortillas, use as quesadilla filling or on top of a salad for taco salad. Makes four portions. Freezes well.
*Its not as complicated as this recipe seems. Brown the onion and meat, dump things in the skillet and melt cheese on top.
